Kinglake Distillery is a boutique Australian whisky producer founded in 2018 by Sam Lowe and Chantal Daniels, set in the bushland north of the Yarra Valley. The distillery is entirely off-grid and has gained recognition for producing Australia’s first certified carbon-neutral single malt whisky, combining sustainable practices with traditional craftsmanship. Drawing on its natural surroundings, it uses untreated spring water sourced directly from Chyser Creek on the property and incorporates local wild yeasts and eucalyptus pollens through open fermentation, creating a distinctly regional flavour profile. With a strong focus on environmental stewardship—including rewilding part of its land—and a hands-on, small-batch approach, Kinglake Distillery produces whisky that reflects both its landscape and a commitment to low-impact production.
